At LATO RICHE, we believe in the concept of helping you revisit Japanese food culture through luxury Italian dishes. We offer a new way to enjoy the mainstay of Japanese cooking: rice. We have added rice to our home-style pizzas and fresh-made pasta in order to bring you a kind of Italian cuisine you have never experienced before.
Bringing out the unique flavor of rice through home-style, kiln-baked pizza
We add a rice purée blend to our pizza and pasta dough and let them set for 12 hours.
Because we add the rice blend and do not mix tomato sauce into the dough, the result is a perfect soft-on-the-inside, crunchy-on-the-outside texture. Even if you choose to take it home and reheat it later, you can still enjoy the fresh-made deliciousness.
Unique pasta that actually stays moist and al dente
All of our pasta is freshly made in-house. We use 100% semolina flour and our rice purée and save water by keeping our dough egg-free. The best feature is the not-too-soft, perfectly al dente quality that we stand by. We have worked hard to perfect this unique texture for your enjoyment.
